Things are sizzling in the back of this food truck as burgers are served with a side of bravado.Mike Schuster and Dominic Maldonado have been in the food truck game for almost seven years, and in that time the industry has boomed.“When we first hit the road, I think there were maybe 230 licensed food trucks in all of Denver. I think now it’s over 500,” said Schuster.Doubled in Denver and nearly doubled across the US.According to the US Census, in 2013 there were almost 3,300 food trucks in the US. That number grew to just under 6,000 in 2018. Sales have risen from 0 million in 2012 to .2 billion in 2017.“We’ve seen it, we’ve seen it in front of office buildings, we see it in the downtown core. And I’m not just talking because of COVID, I’m talking a natural business marker, alive and well within the hospitality and restaurant industry,” said Steve Chucri, the president of the Arizona Restaurant Association He says food trucks are here to stay in his state as well.“I think they’ll always have their place and their spot in the industry," Chucri said.A unique opportunity that food trucks have, they are a to-go business and most social distance guidelines during the pandemic don’t hold them back in the same way they do sit down restaurants.But that doesn’t mean the industry is not facing its own challenges.“Back when April hit and everything shut down, it was about a month and a half straight for us of just wedding cancelations, graduation party cancelations, party after party everyday,” Schuster said.“Food trucks depending on those office buildings to have people pouring out at 12 noon everyday and going to a food truck and buying. So, they’ve got to be hurting just like all of us are,” said Chucri.But with challenges come opportunity so Maldonado and Schuster got to work and got creative.“We started going after some of the business to serve some of the front line workers during the pandemic so we started serving some of the workers at King Soopers who were working their butts off through the whole thing. We fed some the Aurora 911 services, the ambulance services because they were working their butts off. We started doing hospital servings. We found a way to find where people were hungry, working still, needed to eat, and just didn’t have a lot of viable options,” said Schuster.Getting creative to get by. Just like a lot of us over the last several months.One thing that doesn’t change, wherever Maldonado and Schuster serve food, they serve it with heart.“When people come back to the truck for seconds and thirds, because they just want to try every flavor of slider we have, even when they’re stuffed. Even just that, even when they don’t even say anything, you know that they love it and they see the smile on their face and it’s great,” said Schuster. 2809

"I think many of us are finding connections in spirituality in ways that for our parents would seem quite odd, but for us, feel more relevant and feel more authentic," said Jill Filipovic, a columnist and author of the book OK Boomer, Let's Talk: How My Generation Got Left Behind.A millennial herself, Filipovic considers herself a part of this growing trend."I don't affiliate formally with any of these religious beliefs. I would qualify myself as religious none, even though I'm culturally Christian," said Filipovic. The Pew Research Center found just 27 percent of millennials say they attend religious services on a weekly basis, compared to 38 percent of baby boomers. And only about half of millennials--adults born between 1981 and 1996--say they believe in God with absolute certainty, and only about 1 in 10 millennials say religion is very important in their lives."Millennials, as I said, are relatively progressive people, and the Catholic Church is a formal patriarchy. It's an organization in which women are formally barred from being in positions of power," said Filipovic. "One of the hardest parts for me in the last few years has been the rise of different scandals and things that have come up," said Rivera.Through conversation and social events, he says they're working to connect with marginalized groups like the LGBTQ community, who've historically felt ostracized from the church."That's the issue we want to try and resolve. It doesn't necessarily matter how you enter into faith or community, the community is still there longing to accept you as you are," said Rivera. "Definitely LGBT community is an area that we seek to try to mend some of the damages we've seen done across the previous generation or so from the church."A young adult ministry coordinator, Daniel Godinez, was 27 when he reconnected with the Catholic church."I didn't have the right friendships, I didn't have the right connections, it all came down to a moment of emptiness in my life," said Godinez.Despite having a great job and friends, he says life's pleasures were not fulfilling him. In 2012, an old friend invited him to a church retreat, which Godinez believes was God calling him back home. "It was absolutely tough, not having support from your friends at that moment when you're going through that transition process, I think is probably the toughest thing you can encounter at that moment in life," said Godinez.Godinez is now the Young Adult Ministry Coordinator at Most Precious Blood in Chula Vista and married to a woman he met through the church.Rivera says COVID-19 has impacted the church's ability to reach new people; rather than large gatherings, they must rely on small events to continue outreach. TRABUCO CANYON, Calif. – A large brush fire burning in the Cleveland National Forest’s Trabuco Canyon is spreading quickly Monday afternoon. The fire, dubbed the Holy Fire, was reported around 1:30 p.m. near Holy Jim Canyon and Trabuco Creek roads, according to KABC.The Orange County Fire Authority said the blaze grew quickly from between seven and 10 acres to at least 700.The fire also destroyed at least one structure and is threatening several communication towers at the top of a nearby hill.The fire is currently burning away from Orange County and those living in the community of Holy Jim were asked to evacuate out of precaution. Cal Fire is assisting in fighting the blaze.
