Handmade tortillas and rice and beans are all ingredients in some of Silvia Hernandez' most beloved meals. “I'm from Mexico City, so I love tacos,” she says. “My favorite dish is the carne asada taco.” Hernandez is an immigrant and came to the U.S. a few years ago. She knew how to cook, but she wanted to turn her passion and skill and wanted to turn her traditional Mexican cooking into a business. But she had no idea where to even start.“I didn't know anything about, you know, [the] process, license, requirements,” she says. “I did not even know where offices are located.” That’s where Slavitca Park came in. Park created the Comal Heritage Food Incubator as an outreach program. It’s for low-income immigrants, who needed help to start food businesses based around the cuisines of their homelands. “Everything from understanding, how do you build a menu, how do you source food, how do you price it, what kind of licensing, permitting, you need financing,” Park explains of the education the program provides. The incubator, which acts as a learning kitchen of sorts, is packed five days a week. Here, the women create their own dishes and train with professional chefs. The program now includes refugees from Syria and Ethiopia. “I always say food is one of those things that absolutely transcends everything,” Park says. “I just really think that food is the vehicle that builds the community. Breaking breads. That's what it’s all about.” Hernandez completed the program and now has her own catering company. But she says she just can’t stay away from the program. Animal shelters across the country are taking part in a nationwide study that's giving animal lovers the chance to hang out with a dog.Participant Moira Hopkins loves a good happy hour. However, instead of getting a drink, Hopkins is picking up a dog at the Humane Rescue Alliance in Washington, D.C. She picks up a dog named Jackie, who is part of the shelter’s happy hour program. It allows volunteers to take dogs out of the shelter and hang out with them for a few hours to let the dogs escape from the stress of that environment. “You just sort of see the tension just dissipate,” Hopkins says. “A great happy is when they suddenly end up taking a long, long nap because they don't get good sleep in a shelter because it's noisy and chaotic.” The shelter is taking part in a national study by Arizona State University to examine how getting out of a shelter, even for just a few hours, can affect dogs. Workers at the Humane Rescue Alliance say they've seen how a short getaway can help lower stress levels and even make dogs more adoptable. “When dogs appear less stressed to a potential adopter, that makes adopters want to meet them because they're calm and they're lying in their den, rather than jumping around and barking and acting all stressed out,” says Jennah Billeter, who works at the shelter. The ultimate goal is for these happy hours to lead to happy outcomes. “It has really, really good outcomes for both the human and for the dog, because the human gets to have the love of a dog and enjoy them and sometimes maybe even end up adopting them, because they fall in love with them on a happy hour,” Hopkins says.For more information, visit the 1682

Being a truck driver isn't the draw it used to be. At Excel Driver Services, they're grinding gears trying to figure out how to get more people behind the wheel of big rigs. “It's a big issue,” Excel owner Jason Emery said. “You've seen companies go out of business because they can't support growth because they can't get safe drivers to operate their equipment.” Emery says America has a major shortage of licensed truck drivers and the numbers support him. According to the American Trucking Associations, the industry was short more than 60,000 drivers in 2018 – that's almost a 20 percent increase from the year before. The ATA also reports a need to hire more than a million new drivers over the next decade to keep up with growing transportation demands. “There's a huge need for qualified truck drivers right now,” Emery said. “Every company in this town is looking for drivers right now.” Emery says the major reason for the decline is that many drivers are getting older and retiring. Now the industry is trying to attract younger drivers, people like Shelby Stennett – who is changing careers from a frack hand in the oil fields to a truck driver on the interstates. “As far as career-wise making that extra money and put that money in my pocket,” he said. “Being able to provide for myself and my family and my friends. It's important to me because I got to eat. I got to eat to survive.” According to the Bureau of Labor Statistics, the starting pay for a truck driver is ,000 per year. After a few years on the road, however, the ATA says drivers can easily make six figures driving an 18-wheeler. Despite the pay, this job isn't for everyone. Drivers can spend weeks on the road alone and sleep in their rigs. Now economists say fewer truck drivers on the road could end up costing you a lot more money. “For the last several years we've gotten used to free shipping and one-day shipping and give it to me right now,” said Christina Huber, Ph.D. a professor of economics at Metropolitan State University Denver. “Maybe that can't continue.” Huber says with more online shopping and fewer drivers to transport the goods, shipping costs could skyrocket. “If they're having trouble attracting drivers to the industry the only way to alleviate that shortage is to make it more attractive for them to enter,” she said. To attract more drivers, many companies are increasing pay. Excel is now using new technology train a new generation of drivers. “What we decided to do a couple years ago is to purchase a simulator company,” Emery said. “Now we're building our own system to change and evolve how we train drivers.”Evolving to get more drivers to live life on the open road and keep on truckin'. 2726

  

It’s been more than two weeks since federal workers, like Lila Johnson, have been to work.Johnson says it’s been hard, but she takes it day by day. At the age of 71, Lila works part-time at the Department of Agriculture as a janitor to supplement her retirement income. However, she's been out of work since December, because of the shutdown.“My biggest concern is when are we gonna go back to work. That's number one,” she says. “Number two is how I’m going to continue making ends meet.” For now, she has to rely on friends and family to help pay her bills and groceries. Because she's a contract worker, it's likely she will not get the back pay Congress usually gives to federal workers once a shutdown is over. “When I do go back to work, I’m still gonna be behind,” she explains. “I'm gonna have to work at least two months before I can see myself climbing out of the hole.” Other federal workers wonder what they'll do when they don't get paid this week. “I just bought a house,” says furloughed worker Christine Vitel. “I'm not gonna be able to pay my mortgage, so yes, this is affecting me personally. Other people are married. They do have another income. I do not.”As the shutdown stretches into its third week, federal workers are stretched thin trying to find ways to make ends meet. 1309

  

A report looking at cell phone data and geographical increases in COVID-19 cases, has estimated more than 260,000 cases nationwide were a result of the Sturgis motorcycle rally held in South Dakota.The 63-page report looked at the potential results of a “superspreader” event; an event where “large crowds, coupled with minimal mask-wearing and social distancing by attendees.” It included researchers from San Diego State University, Bentley University and University of Colorado Denver. The results were issued over the weekend and have not been peer reviewed at this time.The same group has looked at other events, like Black Lives Matter demonstrations nationwide and President Donald Trump’s rally in Tulsa.For the Sturgis event, they identified counties which saw lots of rally-goers and tracked COVID-19 cases before and after the event in those areas using available CDC data.Roughly 500,000 people attended the event, according to information from the South Dakota Department of Transportation, which ran from August 7 to 16.Their research found in counties nationwide who had a lot of Sturgis attendees, the COVID-19 case count in their home counties increased about 10.7 percent from about a month before to a few weeks after the rally."Under the guise of academic research, this report is nothing short of an attack on those who exercised their personal freedom to attend Sturgis,” Gov. Kristi Noem said in the statement to The Argus Leader. "Predictably, some in the media breathlessly report on this non-peer reviewed model, built on incredibly faulty assumptions that do not reflect the actual facts and data here in South Dakota."The state has reported 124 cases of COVID-19 of South Dakota residents who attended the rally.Last week, state health departments in various states issued warnings about residents who may have contracted COVID-19 at the Sturgis rally. States are relying on patients who test positive to report the possible exposure at the motorcycle rally. "We're never going to be able to contact trace every single person from Sturgis," Andrew Friedson, one of four authors of the study said. "So if we want a good-faith estimate using, at the moment, the accepted statistical techniques ... this is the best number we're going to get in my opinion."Using findings from another team of researchers, the team estimates the Sturgis rally may have generated a public health cost of about .2 billion. The other study looked at the average cost of non-fatal COVID-19 cases, and put the estimate around ,000 per patient. 2576
