Welcome to Dillon, Colorado, where visitors flock to in the winter to see the magical ice castle. Surrounded by 40-foot frozen towers, visitors find themselves in a winter wonderland. The castle is filled with many gems, including caverns filled with icicles, glistening from the glimmer of sun peeking through. You can also go down one of the castle’s ice slides or make a wish at the wishing well. So, how is something like this created? We asked the creator, Annelise Nelson. "We harvest the icicles on site, and they are carefully plucked placed on top of the towers upside down,” Nelson says. “The artificial rain at night helps it grow and increase until it becomes a thick wall of ice, and they create arches, caverns and tunnels." It takes about a month to build on this acre lot. "I really love to see how excited people get," Nelson says. The magic of the ice castle can’t last forever. When finding food is you daily goal, there’s a simple saying to live by: use everything, waste nothing.That is We Don’t Waste’s game plan for ending food waste. Five days a week, the Denver-based non-profit group stocks up on food that will be thrown out, often times for pretty superficial reasons. “If it has dirt on it, if it has a little bruising: landfill,” says Arlan Prebld, executive director and founder of We Don’t Waste. Preblud started the non-profit a few years ago by recovering food rejected by restaurants and grocery stores and distributing it from the trunk of his car. Fast-forward to today, his team collects enough food to fill a massive distribution center in north Denver.“Last year, we put out 31 million servings,” Preblud says. “The collateral benefit of all that is all that food you see and that we deliver on a regular daily basis would end up in the landfill.” And a lot of food ends up in landfills across the country. According to the United States Department of Agriculture, 133 billion pounds and 1 billion worth of food were wasted in 2010. Preblud adds that impact goes well beyond the economy and into the environment. “When you put food into a landfill, it generates CO2 equivalence," he says. "Methane gas destroying the atmosphere."In addition to emitting greenhouse gases, wasted food also wastes the resources it took to produce, package, sell and transport it. So, in theory, by picking up what would be food by the pallet-full and trucking it to those in need, We Don’t Waste is filling many needs. “It’s great that we have partners that care about these people as much as we do, because, as you know, must people don’t,” says Doyle Robinson of Sox Place, a drop-in center for homeless youth in Denver. We Don’t Waste delivers food to Sox Place a few times a week. Doyle, however, says much the gesture provides much more than meals. “It’s great to find people that care and they do this because they care,” he says. “There’s no money in this." 2003

Researchers at Washington State University say they have found a way to triple the lifespan of ready to eat food. In the case of the macaroni and cheese, researchers believe they have found a way to keep macaroni from spoiling for three years. Previously the max lifespan the researchers could get for macaroni and cheese was 12 months using plastic. But using microwave-assisted thermal sterilization and adding a organic coating to metal oxide coating to the plastic can allow food to last three times longer. “We need a better barrier to keep oxygen away from the food and provide longer shelf-life similar to aluminum foil and plastic laminate pouches,” Shyam Sablani, a researcher with WSU, said in a statement. “We’ve always been thinking of developing a product that can go to Mars, but with technology that can also benefit consumers here on Earth.”While using metal oxide coating has been around for sometime, there was a flaw with the coating developing cracks to allow the food to be exposed to oxygen. “We are excited that an over-layer of organic coating on metal oxide helped protect against microscopic cracks,” Sablani said. “Multiple layers of metal oxide coating have also increased the barrier performance. Our research guided development of newer high barrier packaging.”Researchers like Sablani are hopeful the new technology could assist NASA in preserving food for a potential trip to Mars. With current technology, a trip to Mars could last at least two years. A one-way trip to Mars alone could last at least nine months. “NASA knows about our work, but we’re just now getting to the point where we can talk to them with a proven product,” Sablani said. “We hope to work out a way to test these products on the International Space Station in the future to show that the food is safe after long-term storage.”NASA has said its benchmark is for food to last five years. Sablani's team has food that is currently being aged to see if it is possible to store ready to eat meals for five years.
