According to the International Dairy Foods Association, the average American consumes more than 23 pounds of ice cream per year. That's more calories than we'll ever want to know.It even shares one key resemblance to other addictions. According to one recent study, the more often we eat ice cream, the more of it we may need to satisfy the craving.But why?"When you get the answer to that, will you call me and let me know?" joked Steve Young, a consulting food chemist and microbiologist, and a former technical director at Dreyer's and Edy's Grand Ice Cream, who teaches courses on ice cream science and technology to the very people who make ice cream, including at Breyer's and Ben and Jerry's.According to Young, helping ice cream manufacturers produce ice cream with a high appeal for consumers "is the study of a lifetime." That's because it involves "a lot of applied chemistry and physics," he explained, along with "heavy doses of personal preferences." For example, Young notes, "I love coffee ... but if you put it in ice cream format, I can't stand it."As the co-author of "Tharp & Young on Ice Cream: An Encyclopedic Guide to Ice Cream Science and Technology," he knows a bit more about what goes into making decadent ice cream than he let on. All national forests in California will close Wednesday evening as the state sees “explosive growth of fires throughout” the state.The U.S. Forest Service closed eight national forests in Southern California Monday night, and the rapid growth Tuesday in windy weather conditions led to the decision to close the remaining ten forest areas.Nearly 2.3 million acres have burned already this year, setting a state record. Roughly two dozen wildfires are burning currently. “The number of large fires and extreme fire behavior we are seeing across the State is historic," said Regional Forester Randy Moore in a release. "These temporary closures are necessary to protect the public and our firefighters, and we will keep them in place until conditions improve and we are confident that National Forest visitors can recreate safely.”More than 140 people had to be rescued from the path of the Creek Fire this week, some were hikers and campers trapped without a way to escape the rapidly spreading flames. The Creek Fire is burning in part of the Sierra National Forest, which was closed to visitors on Monday.The Forest Service manages 18 National Forests in California, which take up almost 20 million acres. ALPINE (CNS) - A 7-year old tiger at Alpine's Lions Tigers & Bears animal rescue facility died of injuries inflicted by a fellow tiger, it was announced Tuesday.Maverick suffered fatal injuries after he and the other tiger -- Moka - - were accidentally allowed to come into contact with one another on Monday. The animals were living in separate enclosures, according to Lions Tigers & Bears founder Bobbi Brink, who said no staff or visitors were harmed.The staff veterinarian assessed both animals afterward. Moka has scratches, but no serious injuries."This was a human error, and one we're so deeply heartbroken about," Brink said. "When caring for a 400-plus-pound apex predator, layered safety measures must be established, and this is exactly what we've implemented at our accredited sanctuary since our founding."Unfortunately, one of our safety measures was mistakenly missed, and because these magnificent, massive animals are wild, their reactions to their surroundings -- especially new situations -- are unpredictable," she said.According to Brink, the nonprofit organization regularly conducts staff safety trainings, including one on emergency protocols last weekend. She said the protocols will be reviewed extensively this week.Maverick was rescued on April 20, 2014, at 9 months old. He was born in captivity and purchased illegally by someone who did not have the proper licensing to own an exotic animal. California Fish & Wildlife personnel seized Maverick and reached out to Lions Tigers & Bears to provide him with a home."There is an inherent risk when keeping apex predators in captivity, and we would like nothing more than to see an end to this, but until then, and as long as our sanctuary is needed, we will continue to be there for these animals in need," Brink said. "Maverick, we will miss your friendly chuffs and curious, fun-loving spirit. Rest easy our sweet boy, run free, and keep on swimming." 1956

A Wisconsin woman who jumped in front of an oncoming train to save her mom is now feeling well enough to share her story. The incident first happened back in August.Katie Wenszell, 28, is a Milwaukee teacher. She, her mom and her sisters were on a girls trip to Atlanta, waiting for a train, when the unthinkable happened to her mother."All of a sudden, the guy came out of nowhere and just pushed her. I didn't have any time to grab her. She was literally in the air and hitting the tracks," Katie said. Katie remembers bits and pieces of the day, but says her sister told her she walked to the end of the platform and was trying to yell for her mom to get up."Then, I looked down to see the training coming and all I did was jump. She had her head and feet on the tracks? And I knew that if I didn't get her off, she was going to die no matter what. I decided it worked in the movie, let's lay her out flat, lay me down flat, and hopefully pray to god that it will work."Katie says she does not remember what happened after she jumped, that it "all becomes literally black."Although they don't know for certain what happened underneath the train, it appears Katie's plan worked.  Her mom, Susan says "she managed to get me between those two tracks. That train went over the top of me. I never got hit by that train."Susan did suffer a concussion and severe head injuries from the fall. The train did hit Katie, as it was coming to a stop.When asked about her injuries, Katie said she has "a reconstructed shoulder, smashed my face, so I have plates in my face. And I have amputated toes."She also believes the train dragged her by her necklace, causing serious injuries to her neck. She woke up in the hospital five days later with a tube down her throat."Literally the moment it got taken out, is my mom OK was the first thing that came out of my mouth. What did they tell you? They said yep, she's fine, she's here," Katie said. Katie says she was ecstatic to find out her mom was alive, although her mom was upset that Katie risked her life to save her. "She's 28, I'm 57. My goodness, I've had my life," Susan said. That life now includes helping Katie get better so she can walk on her own again. The amputated area is healing so well, Katie wanted to show it to us."When I first saw it, I was the only one who took it perfectly fine. After it started going down, I was like mom, look at the tiny alien foot, because it's really tiny," Katie said. As you can see, Katie has a really positive outlook and is working hard to walk again. She was supposed to be in China right now, teaching English and still hopes to go at some point.As for the stranger who pushed her mom, another passenger held him until authorities arrived.  The family has a Go Fund Me page to help with Katie's medical bills.  2870

Alleged Austin serial bomber Mark Anthony Conditt was "a deep thinker" who came from a tight family that home-schooled him, people who knew him told CNN on Wednesday.Conditt killed himself early Wednesday after police, who had been staking out his hotel, followed him onto Interstate 35.
