In recent years, healing and meditation has become an important part of Janea Escobedo’s life.“It’s just very relaxing to be under the trees to watch the leaves, and hike around to see the wildlife. It’s, it’s very healing,” she says. Escobedo was diagnosed with inflammatory breast cancer.“In February of 2017, I was happy-go-lucky turned into a cancer patient with a very aggressive rare disease that I didn’t know what to do with,” she recalls. Dr. Radhika Acharya, the medical director of the UCHealth Cancer Center in Highlands Ranch, Colorado, has been assisting Escobedo in her cancer journey.“[Inflammatory breast cancer] makes up just about 0.2 to 0.5 percent of all breast cancers, so it’s very rare, and it involves the skin that overlies the breast,” Dr. Acharya says.She says inflammatory breast cancer is so rare, it’s a challenging cancer to diagnose. “I think what’s difficult is sometimes it gets underdiagnosed or not diagnosed correctly because it looks like mastitis, which is swelling of the breast from an infection, or cellulitis, which is swelling of the skin or infection of the skin," she explains. "And a lot of women can experience that after pregnancy or when they’re breastfeeding or just with trauma."As uncommon as it may be, Escobedo knew the symptoms from a news segment she had seen years prior. “Honestly didn’t feel sick, didn’t think anything was going on, but I had that itch,” Escobedo says.She thought that itch was simply dry skin. However, after a couple weeks, it was still itchy so Escobedo decided to visit the doctor. An MRI showed nothing, but a biopsy proved it was inflammatory breast cancer. “With inflammatory breast cancer, 9 times out of 10 there will be no lump,” Escobedo says.The potential for a lump is just one symptom out of many for the disease. Other possible symptoms include itchiness, swelling of the breast, dimpling or thickening of the skin (like the skin of an orange), a discolored or inverted nipple, or the breast can get warm. Considering it’s so difficult to discover, the cancer is often very advanced by the time it’s diagnosed. Escobedo says she had to go through super intense chemo, surgery and radiation. However, genetic testing helped guide doctors and Escobedo to make the right decisions for her body.“Genetic testing more and more is becoming part of the data points in considering a patients’ diagnosis and optimal treatment,” UCHealth Genetic counselor Kristina Markey says.Oncologists say if you think you could be experiencing any of these symptoms, you should see your doctor right away. “Be persistent, and don’t just sort of say ‘it will get better’. If it doesn’t get better, go see your doctor again,” Dr. Acharya says.Escobedo will have to undergo chemo every three weeks for the rest of her life. Some days, she says she can barely drag herself down the stairs, but in the end, she chooses to stay positive and keep going.“When I wake up in the morning and I’m alive, then I just need to live the day," Escobedo says. This family took in a little boy and gave him a lifesaving gift.Nicole Alles and her husband have been fostering children for more than a decade. A few years ago, the couple decided to take a break and decide if this is what they wanted to continue doing.That’s when they received a call about a baby boy that no one was willing to take in.“WE got a call for him in December and they couldn’t find anyone to take him in because of all of his medical complications,” said Nicole.Sebastian was born in October of 2014 with a long list of health concerns including end stage renal, collapsed lungs and stage 4 chronic kidney disease."I mean the biggest issue was that his kidneys weren't working and we knew we were going to need to start him on dialysis before he even left the hospital,” said Dr. Myda Khalid, children’s kidney doctor at Riley Hospital.Sebastian would eventually need a new kidney.Nicole, a home healthcare nurse, knew she could help Sebastian. The couple took him in and she did his dialysis at home."We took him in under the premise that he would probably go back home soon, but that did not happen,” said Nicole.After four months, Sebastian’s biological parents discontinued their parental rights.In 2016, the Alles family legally adopted him.His two foot tall box of medical records was delivered to their home shortly after.That’s when Nicole learned she and her newly adopted son shared a blood type.After waiting for Sebastian to be strong enough for a transplant, Nicole went through extensive testing and learned she was a match.“When they found out I was a tissue match for him that was when we were just so excited because that just meant so much to us that I was able to give him the kidney,” said Nicole.Today Sebastian is one year post operation. He’s healthier than ever.His kidney transplant, one of many successful surgeries he’s had to improve his quality of life.“To look at him, you really wouldn’t know he’s been through as much as he’s been through,” said Nicole.Nicole believes Sebastian was meant to come into her life so she could be his mother and his donor.“Being able to save his life... it makes me very emotional, very fortunate... very blessed... very happy because I know that I was a part of that,” said Alles. 2346

In the heart of Silicon Valley, people are keeping a pulse on a new product, as techies transition to foodiesAt Vina Enoteca, a restaurant located a few blocks from Stanford University, staff serve up new plant-based proteins.“We had a spike on the pizza with Impossible Meat,” says owner Rocco Scordella.Scordella put products created by the company Impossible Foods on his menu a few years ago. Now, they account for 20 percent of his pizza sales.“I think it’s as close as it can get,” Scordella says. “That’s why I think when a lot of meat eaters taste it they’re like, ‘Oh, wow. This is close to real meat.'"That’s the idea behind Impossible Foods, one of the top plant-based protein companies in the country. The company gave us an all-access inside look at their lab, showing us the science of turning plants into meaty-tasting patties.“The Impossible Burger is made of actually just four really simple categories of ingredients,” Laura Kliman, Impossible Foods senior flavor scientist, says. “We have proteins, our nutrients which generate flavor; we have our binders and we have fat.” They also use the blood red liquid hemoglobin.“Heme is what makes meat taste like meat,” Kliman explains. “It’s an iron containing molecule that is found in every living plant and animal and is essential for life.”This food tech startup was founded by a Stanford University biochemistry professor and a team of scientists back in 2011. After studying meat at the molecular level, they launched Impossible Burger 2.0 in 2014 and the sales have skyrocketed“Since then, we have grown from about 5,000 restaurants in January 2019 to now more than 9,000 restaurants that are serving the Impossible Burger,” Rachel Konrad, Impossible Foods chief communications officer.Those restaurants include some of the biggest fast food franchises in the world.“Just in the past six weeks, you’ve seen Burger King and Little Caesars jump on this trend,” Konrad says. “They’re both rolling out the Impossible Burger and the Impossible Sausage."Impossible Foods hopes to increase that demand by launching in grocery stores later this year.With a starting price point on par with grassfed beef and going down from there.“If we want to make a product that is affordable for many, we need to be using ingredients that are really part of the food chain now,” says David Lipman, Impossible Foods chief science officer.Lipman claims his team’s plant-based foods are better for your health and the environment.“Animal-based agriculture has been possibly the most damaging thing we are doing to the planet,” he says. “We can get the ingredients we need just from the earth at a 20th the amount of space and land, much lower water usage. So, we want to cut out that middle man and make the use of animals and agriculture no longer needed.”Cattle rancher Joe Morris, however, disagrees with those claims. “First of all, they haven’t been around really to understand if that’s true or not,” he says. “Whereas actually beef has been around since people have been people.”Morris’ family’s business T.O. Cattle Company is one of California’s oldest beef companies, dating back to the Gold Rush era. He believes in tradition over technology.“The people that are doing plant-based proteins are doing it with good intentions,” he says. “But there’s a failure to understand the ecology of just ecology and they really don’t know much about agriculture.”Instead, Morris says whatever damage caused by animal agriculture has to be healed by holistic animal agriculture.“The animals are incredible creatures and they do amazing work," he says. "And the results of their work is biodiversity beauty water in the ground. The plant-based proteins, there’s no romance, there’s no beauty there.”When it comes to customers, however, beauty is in the eye of the beholder. “It’s good,” says a man who bought an Impossible Burger from Burger King. “I could hardly tell it wasn’t a regular beef patty.”This customer also tells us that he added bacon to his plant-based protein patty. 4039
