Her speech at the 2016 DNC included one of the week's standout quotes: "Our motto is, 'When they go low, we go high.'"Since Harris joined Biden on the ticket, they've coalesced around certain themes, including the former vice president's ongoing call that 2020 is a battle for the "soul of the nation."But at the campaign's core now is trying to persuade voters that they are best equipped to lead the U.S. out of the coronavirus pandemic.The televised portion of Monday's convention begins at 9 p.m. ET. It’s all hands on deck during harvest time at Infinite Harvest.This indoor, hydroponic farm in Colorado specializes in microgreens, young vegetables grown in a controlled environment and cropped shortly after they’ve sprouted.Production manager Luke Blough says microgreen sales have quadrupled in the past nine months with more consumers becoming more health, sustainability and environmentally conscious.“We kind of check all three of those boxes,” he said. “Our microgreen products are very nutrient dense; very flavorful. They’re sustainably grown locally and we have less environmental impact.”There's less environmental impact because of the way they’re grown. Stacking shelves of microgreens and growing them under LED lights means using about 95% less land than traditional farming.This method is catching on nationally.“Consumers are becoming more interested in microgreens,” said Sarah A. Johnson, Ph.D., with the food science and human nutrition department at Colorado State University. “They’re a relatively new agricultural food crop.”.In addition to the nutritional and environmental benefits, Johnson’s team found that microgreens could have major impacts in urban areas by making fresh produce more easily available to areas considered food deserts.“I think they have a lot of potential to kind of pop up all over the place,” she said. “Not just with these large companies but with smaller sort of pop-up, start-up companies as well.”As more farmers look to avoid unpredictable weather and leave less of a carbon footprint, experts predict microgreen consumption will continue growing nationwide“There are a couple of things we can do in a controlled environment that you can’t really do when you’re at the mercy of Mother Nature,” Blough said. 1768

  

INDIANAPOLIS -- A guidance counselor at Roncalli High School says she was sad and hurt that school administrators and the archdiocese gave her the option to resign or dissolve her marriage after they learned that she was married to a woman. Shelly Fitzgerald says she was asked to meet with school president Joe Hollowell and Principal Chuck Weisenbach last Friday.At that meeting, Fitzgerald says she was shown a copy of her marriage certificate. Hollowell said someone turned it into him and that he then had to turn it into the archbishop."I was hurt, sad, I was hurt," said Fitzgerald. "I've been there 15 years. I've been a part of a community that loves each other. I was stunned. Fitzgerald says she was given four options: to resign, dissolve her marriage or, "stay kind of quiet and hope that it would, you know, stay quiet until the end of the year and keeping my job as long as possible if it stayed out of the media and then they would not renew my contract the following year. Or depending on how boisterous it became, they would have to move towards sooner termination.""I love my wife very much. I didn't have any intention to resign a job that I adore. For me to walk out was like saying I didn't want to be there anymore and that wasn't the case," said Fitzgerald. Fitzgerald says she's been quiet for the past 15 years and she wants to be honest with the people in her life that love her. "It really wasn't hiding, I'll tell you that. People knew. People I worked with knew. People I called friends and love, that wasn't secret from the school. There are tons of people that knew and loved me.
