The "City by the Bay" is known for more than a few things. Treacherous hills, cable cars, golden bridges and…Sourdough bread, which is San Francisco’s not so well-kept secret for at least the last 150 years, if not longer. Just ask Jen Latham.“The Basque country, which is that region kind of in between France and Spain, has an amazing tradition of this exact style of bread, like that very crusty, very wet, very open crumb bread. And during the gold rush and just after the gold rush, there was this huge influx of Basque people to the to this area. They brought that tradition of bread here,” said Latham.Latham is the head of Bread at Tartine Bakery in San Francisco.Ever since San Francisco boomed in the mid 1800’s with the gold rush, the city has been a haven for the sour bakers. The tradition is alive and well at Tartine.What makes sourdough different than other bread? It’s this little thing called a starter.“It’s a paste of flour and water that’s inoculated with the right balance of yeast and bacteria to raise dough,” said Latham.Yup just mix a little flour and water and let it collect the natural bacteria in the air and you too can have your very own sourdough starter. And since the onset of the COVID-19 pandemic people have.People at home have been making, feeding, and nurturing their own starter at home.“Hopped on the bandwagon during COVID, just like millions of people probably did. Kind of found some blogs and started from there but it’s been going since like April,” said TC Jamison, a home baker.Jamison started his starter six month ago when the lockdowns were in full swing. He’s been baking and feeding it ever since.“You’re dealing with something that’s alive, so it’s going to be different every time,” said Jamison.Yup, feeding it fresh flour and water every day, for six months. It’s a lot of work.“The starter has been going, the one that we use now for well over 20 years,” Latham explained.So Jamison has a little ways to go. Some bakeries in San Francisco have had an ongoing starter for more than 150 years.But Jamison has a pretty special goal for his starter."My daughter was born in June. I was pretty hell bent on keeping the starter going before she was born and then afterwards. So now I can always say, that’s been around since before you were born,” he said. That will go down in the dad joke hall of fame.At Tartine, they’ll continue to shape, fold, and flour their way into the fabric of San Francisco sourdough history.“You’re never done learning about bread. There’s always more to learn. There’s always things you can change, there’s infinite variables. The flour and the weather and you’re fermentation management, timing, temperature. TAMPA, Fla. — Air conditioning units may be contributing to the spread of COVID-19, especially in the southern part of the United States, according to a Harvard epidemiologist.Dr. Edward Nardell is a professor in the Departments of Environmental Health and Immunology and Infectious Diseases at the Harvard T.H. Chan School of Public Health. He's done in-depth research on how air conditioning units contribute to the spread of airborne infections.Nardell said air conditioning can help airborne viruses spread in three ways.First, people go inside to cool down, when you are much safer outdoors, Nardell said. Now, we're seeing more people indoors because of the high heat and humidity, specifically in the southern states like Florida.The second problem is that air conditioning brings in very little outside air, according to Nardell. While this isn't a major problem inside your own home, it can be especially problematic in corporate settings."It just isn't economically possible to bring in outside air, recirculate it and dehumidify it," he said.Lastly, he said when people are indoors, you're often not spaced out safely as you would be outdoors."You are not socially distanced as much, but you're re-breathing the same air that someone else just exhaled," Nardell said. "We call it rebreathed air fraction, and if someone is infectious, often asymptomatic, you're going to be rebreathing their small particles."Nardell also said air conditioning units can generate air currents that can carry large particles even further, similar to what researchers found contributed to the spread of the novel coronavirus disease in an air-conditioned restaurant in Guangzhou, China, involving three family clusters.On the Department of Homeland Security's website, this tool can be used to estimate how long the virus would be expected to remain stable while airborne.Now, the Centers for Disease Control and Prevention is recommending restaurants increasing the distance between tables and improving ventilation.The use of germicidal lamps, a technology that Nardell said is almost 100 years old, has been proven effective in protecting against tuberculosis infection and is already in use in some settings to fight COVID-19.The lamps are set up to shine horizontally, high in the room where sterilization is needed. Air currents, stirred in part by warmth from human bodies, circulate up to the ceiling, where the ultraviolet light kills floating pathogens, and then back down again.This technology, Nardell said, is not only proven, but it can also be deployed cheaply and easily in a number of settings as society reopens.This story was originally published by Lauren Rozyla at WFTS. 2691

"I was like, 'OK, let's build it.'"The site sweeps up COVID-19 data from across the web. Things like press releases, news stories, info from health departments and more. It includes taking anonymous tips from school teachers.The Monitor team then verifies the details, looking for additional sources or contacting districts, before marking cases confirmed."We make sure that we check the information we're putting up there, which is for me, one of the most important elements," Jones said. "I would never want to put out inaccurate information."Officials terminated Jones from Florida Health after she made allegations the department was misrepresenting data earlier this year in the pandemic. Florida Gov. Ron DeSantis later told the press that Jones was fired for insubordination."Yeah, it's a non-issue," DeSantis said in June.Jones has since become a public figure, critical of the state's handling of COVID-19. Her new website, she hopes, will provide clarity at a time when many are seeking answers."We want people to know this is a place that they can go to," Jones said. TAMPA, Fla. — A creation to help combat the coronavirus from USF Health and Tampa General Hospital is now helping people across the world.When the COVID-19 pandemic started, researchers worked to fill in gaps from the shortages that came with it, including nasal testing swabs.“Unfortunately that component of the test kit was missing because it actually comes from overseas and actually it’s manufactured in northern Italy and if we recall back to March that is where everything was shut down and so that directly impacted our ability to be able to start testing for COVID in the U.S.,” said Summer Decker, Ph.D., the director of 3D clinical applications at USF radiology and TGH.So a team used technology in their lab to create a 3D nasal swab.“We worked with our colleagues here and the department of infectious disease and emergency medicine to be able to come up with an alternative to that swab that was in the test kit that actually was patient safe, comfortable and actually was able to capture that viral test that we needed so badly to do,” said Decker.Quickly, they moved from design to clinical research, partnering with Northwell Health in addition to TGH.“So suddenly we were getting bags and bags of these test kits thousands a week and it’s what saved us and I think in some ways it saved the Tampa Bay area because it allowed our hospital to really keep up this high volume testing,” said Dr. Jason Wilson, the associate medical director of TGH’s emergency department.That clinical trial is now completed.“What we found was pretty amazing. They performed as well and in some cases even better than the traditional swab,” Decker said. “That clinical trial has now come out it’s been published in a top journal for infectious disease.”Wilson said the hospital still uses them when there’s not enough standard of care swabs.The team also shared the information with the swab for other hospitals and agencies facing shortages, so they could create them. Since then, Decker said tens of millions are being used in more than two dozen countries.“It’s pretty incredible to us. We all kind of keep pinching ourselves,” Decker said.She says to her, the swab represents collaboration.“It’s not just a COVID thing. Target announced Tuesday that it is raising its starting pay to an hour beginning July 5, fulfilling a promise it made three years ago to pay all employees at least an hour.In 2017, Target announced it planned to increase starting pay for employees from to an hour by 2020. Since then, the store has gradually increased its starting pay each year. In 2019, Target increased starting pay from an hour to an hour.“Everything we aspire to do and be as a company builds on the central role our team members play in our strategy, their dedication to our purpose and the connection they create with our guests and communities,” Brian Cornell, Target's Chairman and CEO, said in a statement.Target also announced that it would be giving a 0 bonus to all essential workers "for their efforts throughout the coronavirus pandemic."In addition, Target said that it was offering employees free access to telehealth services through the end of the year, even for employees who don't get insurance through the company. 1039
