(KGTV) - Paralympic Triathlete Amy Dixon trains, and lives by a simple motto: No Sight, No Limits.Now, new technology is taken even more of her limits away.Dixon is 98% blind, the result of a rare autoimmune disorder she got in her early 20s.Over the summer, she started using the IrisVision headset, which has helped give her a full field of vision."I can only see my knuckles and part of my fingers. The fingertips and palm are completely missing," Dixon explains when describing her sight. "With the headset, I saw my whole hand for the first time in 22 years!"The IrisVision Headset uses cameras mounted to a virtual reality-style headset. Technology within the headset helps focus the camera's view onto the part of the retina that can still process light. That creates a fuller picture for the wearer."It takes what's in front of you and remaps it on the digital screen inside the headset in a way that you can see," says IrisVision CEO Ammad Khan."I cannot wait to see how this technology will help hundreds of thousands of people around the world," he says.Dixon says it's helping her with the mundane, everyday aspects of training for the Paralympics."Writing sponsors, working on a computer, emails, doing expense reports and progress reports for USA Triathlon; it enables me to do all of that," she says. "That's equally as important as my training."Khan says this will help people with limited sight be able to do things like watch tv, play cards, go to movies, cook, navigate around their house, and all of the other mundane daily activities that people will full sight take for granted.He also says that this could help people stay in jobs longer, even as their eyesight gets worse.The headset is also equipped with Amazon Alexa and several other apps to make life easier.It was developed with the help of Johns Hopkins University and has FDA Approval. Khan says the headset is covered for Veterans under the VA system, and his company is working on getting more insurance carriers to cover it.Dixon is working towards the same goal through her non-profit foundation.Meanwhile, she's also working towards Tokyo in 2020. Roger Rowe School third-graders Grace Miller and Madison Stine set out to send a veteran to Washington D.C. with Honor Flight San Diego.They were so successful they ended up sending two veterans."That trip for me was the most fantastic trip of my life. I've been all over the world - and Honor Flight was the most fantastic trip I've been on," said George Sousa, a Korean War veteran who served in the U.S. Army.The girls also helped send U.S. Marine Corps Veteran Marshall Varano who also fought in the Korean War."It's great to see young people like this take care of older folks," said Varano.Fundraising is critical for Honor Flight San Diego. It costs over ,000 to send one veteran to D.C. and over 0,00 for the entire weekend. ESCONDIDO, Calif. (KGTV) -- Hundreds of people attended a carnival hosted by a celebrity chef on Monday to raise money for an Escondido restaurant owner nearly killed in a hit-and-run last December. Kaitlyn "Rosie" Pilsbury was riding her motorcycle when she was hit head-on by the driver of an SUV. The driver ditched the vehicle and took off. It happened in Vista just days before Christmas. Pilsbury suffered massive injuries and was in a coma for 12 days. "When I heard this happened my first call was to the network, my second call was to the mayor, and my third was to all these people, this is a 'Restaurant: Impossible' family in a community that cares about that young girl," said celebrity chef Robert Irvine of the Food Network. "She looks way better than she did four days ago. And today, she looks way better than she did yesterday." Pilsbury's mom flew in from New Jersey the moment she heard about the accident. Marie Pilsbury said the support is overwhelming. "She is, I believe, a miracle, in my opinion. I'm sorry, all the prayer and all the love I know that she felt it and I know that it made a difference," Pilsbury said tearfully. Her daughter is scheduled to be released from a rehab center on Tuesday. "She is so positive and so thrilled and so thankful for everything," said Pilsbury. ESCONDIDO, Calif. (KGTV) - Plans are underway to reinvigorate Escondido's historic downtown, with new businesses and plans to make the area more pedestrian friendly. One of the new ventures is the first-of-its-kind. "Escondido now has really started to invest a lot of time, a lot of effort, and they're putting a lot of money into the downtown district," said Nick Corona, a nationally recognized homebrewer who lives in San Marcos.When Corona started homebrewing in 2012, the dream was always to start a brewery, which he named Five Suits Brewing. Now that dream is coming true in a way he couldn't have envisioned back then. "We're looking to hopefully become a little bit more of a draw for Escondido."The plan is to house four different businesses under one roof, three of which are craft beverage manufacturers: beer, gin, and mead.The gin distillery is Stoke Distilling Co. and the meadery is Good Omen. "Nobody else in California and I don't even think in the U.S., has a storefront place that you can go to that has a brewery, a winery, and a distillery, with a restaurant all in the same location," said Brian LaMere, Owner of Good Omen.The owners of Carlsbad's Notorious Burgers will be supplying the food, which will consist of craft tacos and Mexican street food. The project is still waiting on approval from the alcohol and beverage agencies, but Corona says they've identified a 14,000 sq/ft property on Grand Ave. "It will be a destination, there's no doubt about it," said Corona. As far as making downtown more friendly to pedestrians, city planners say there are plans to widen the sidewalks, create more parking, and add art.
