And as the trend continues, Hawthorne Country Store in Escondido has seen a resurgence in homesteading."Homesteading is a little bit like the original McGuyvering," says managing partner Heather Thelen.She says it's a lifestyle about being self-sufficient when it comes to food and agriculture."Anything from gardening, food collection, hunting, preserving cheese, and using animals for food or for other uses," Thelen said.And because of the current pandemic, everything from chickens to pickling has become very common and popular. "To think that this is something we've been reminded about with COVID. When our supply chains got interrupted, and there wasn't availability of some of the things like meats or products, we just couldn't get because we couldn't go out," says Thelen.And at Hawthorne Country Store, they are offering and education is homesteading. And how in 2020, living off the land, can be quite simple and fun. "We're doing a few classes online, as well as YouTube videos to help people," Thelen said. "We want people to have access to local help, because the videos and the television shows that are out there, are in the Midwest. ESCONDIDO, Calif. (KGTV) -- Students at Classic Academy High School will return to school Tuesday without one of their own, who was tragically killed in a car accident over the weekend. Jonah Staebell died early Saturday morning when the truck he was riding in crashed. CHP officials say the accident happened at about 2:35 a.m. on Saturday on Summit Drive and Old Pasqual Road. Officers say seven teens were riding in a pick-up truck when the 18-year-old driver lost control and overturned. Five teens, including Staebell, were riding in the bed of the truck and all of them were ejected. Staebell died at the hospital. Staebell's principal, Dana Moen spoke to 10News Monday night. Moen remembered Jonah as a beloved student who did well in the classroom and in athletics. Moen says Staebell played football, lacrosse, and was a dancer. School officials tell 10News students officially go back to school on Tuesday and grief counselors will be on-site for as long as they're needed. According to Moen, the other teens involved in the accident were all treated at the hospital but have since been released. (KGTV) -- Neighbors in an Escondido neighborhood are worried after they say dozens of tires were slashed overnight Saturday.The incidents reportedly happened on 4th Avenue and 2nd Avenue between Date and Elm Streets.Residents on 4th Avenue reported waking up Sunday morning to find that at least 11 vehicles had their tires slashed.Similarly, residents on 2nd avenue reported that nearly 30 vehicles had slashed tires.Police said they have been made aware of the incidents but it’s unclear if they have a suspect or will be investigating.Imagine waking up and finding your tires slashed, then finding out it happened to DOZENS more on your block. (KGTV) - Residents of a small mobile home park across the street from the proposed Newland Sierra development, Measure B on the March ballot, say they fear a "yes" vote to approve the project could do irreparable damage to their community.Deer Springs Oaks is made up of 32 mobile homes off Deer Springs Road, directly across the street from the Newland Sierra site. That plan, if voters approve, would allow for around 2,100 new homes, along with open space and infrastructure changes. Residents of Deer Springs Oaks, funded by the nearby Golden Door Spa, have been making the case to voters that Measure B will make a bad traffic situation worse and create a dangerous trap in a wildfire zone. But they also worry that the project could have a more direct impact on their homes. The building of Newland Sierra would require the widening of Deer Springs Road, as well as changes to the nearby interchange with I-15. While Newland Sierra developers say these will not affect the mobile home park, the residents say they are not getting any guarantees from Newland Sierra, the County, or CalTrans."We don't know what they're going to do, how they're going to do it," said resident Georgeann Higgins. "They're so arrogant as to not inform us. These are our homes." Lawyers representing many of the residents obtained plans for some of the alternatives being considered by CalTrans. At least two would cause major changes to Deer Springs Oaks, including the possibility of residents losing property and a road being moved to go through the center of the complex."They impact the park big time," said resident Tony Eason. "They would destroy the park."A spokesperson from Newland Sierra told 10News that the maps being used by the residents are outdated. He sent 10News at statement: “This is just another desperate attempt by the Golden Door Spa and its army of lawyers to try to confuse and scare voters. This alternative was one of more than a dozen road improvement alternatives that was studied. It was ultimately rejected by CalTrans and is no longer an option. The real truth is that Measure B will create affordably priced homes for working families with open space, parks and trails - a better choice than the current General Plan that permits a two million square foot mega-commercial development, mansions and parking lots."
