When COVID-19 forced businesses to reduce capacity, restaurants had to get creative. Many opened up outdoor space to dine.Now, with winter coming, restaurants are scrambling to figure out how to keep outdoor spaces comfortable.“We won a James Beard award here. I think what we’re known for is amazing food and service and great wine,” said Chef Jennifer Jasinski, owner of Crafted Concepts Restaurant Group. Rioja is one of the restaurants.“We’re just trying to plan. Hope for the best, plan for the worst,” Jasinski said.Like many restaurants across the U.S., Rioja is struggling with bringing business back and following physical distancing guidelines.“The order that let us increase our patio at each of our restaurants was a really big help over the summer. It got us to about 65 to 70% of our prior year occupancy,” Jasinski said.Outdoor space has been the saving grace for many.The National Restaurant Association Research Group conducted a survey of more than 3,500 restaurant operators from August 26 to September 1 nationwide.“Places that have table service, approximately three fourths are currently utilizing outdoor space which is a very large percentage,” said Mike Whatley, vice president of state and local affairs for the National Restaurant Association. “And it's making up an average of 44% of daily sales, which is very high by historical standards. Almost half of their money currently is coming from outdoor dining.” But outdoor space may present some challenges in the coming months.“Equipment for outdoor dining, especially when it gets cold, it gets expensive,” Whatley said. “What we found is that the average restaurateur is hoping to utilize their outdoor space two months more from this point moving forward.”“It’s absolutely terrifying. I feel like it’s 'Game of Thrones' and winter is coming and I’m scared. It’s not white walkers, I’m just scared of the occupancy,” Jasinski said. And she’s not alone.Many restaurants across the country are facing the same battle, and searching for solutions. The City of Chicago is reaching out to help by hosting a Winter Design Challenge, inviting the community to reimagine the winter outdoor dining experience for a prize.It’s similar to how Larimer Square in Denver, Colorado, where Rioja is located, was re-imagined, by letting the community have a say.“It wasn't just about the seating capacity, it was about the experience itself of being on the street and I mean really, it’s worked,” Jon Buerge said. Buerge is the Chief Development Officer at Urban Villages, the property management company in charge of Larimer Square, a prime example of the “Street-ery” concept.“This 'street-ery' concept is a new one where you block off a street in an urban area, and allow restaurants to take over some of that space. We’re seeing that in a number of jurisdictions,” Whatley said.“Some of the things that we've been exploring are tent systems that could be heated and, on a nice day, you can roll up the walls,” Buerge said. He said solutions really depend on the place.“Seattle has been slower to reopen. The people in Seattle have been less willing to go out and restaurants have been closed for longer. So it depends on the market, it depends on the weather, it depends on whether the people in these cities are ready to come out,” he said.As temperatures drop, restaurants are weighing the benefits and costs of seating diners outdoors.“There's all these hoops we have to jump through for less dollars,” Jasinski said. “I haven't heard of anybody else having any brilliant ideas that don't cost a ton of money.” 3588
When it comes to free food, demand is up and donations are down.To help feed the hungry, volunteers have turned a school parking lot into a pantry.“That’s what's important,” said Maria Estrada with the Wyatt Academy, a charter school in Denver, Colorado.Once a week, her teams passes out free bags of food to families and to people like Marco Esparza.“I’m getting some apples and potatoes,” he said.For Esparza, these donations more than just feed his family.“With this kind of pandemic, it helps us to stay safe at home."Since COVID-19 hit, Estrada says more people are requesting food donations across the country while volunteers adjust to the new norm and practice new safety guidelines.“Things are different,” Estrada said about food donation centers. “We now have to make sure everybody is wearing gloves. We want to make sure everybody is being safe. Everybody has their masks on. We’re trying to keep everybody social distanced.”Estrada says the COVID-19 crisis is creating somewhat of a national food shortage crisis. That’s why they’re now partnering with the YMCA.“When COVID hit, YMCAs across the country started to support food programming,” said Katie Canfield with the YMCA.Nationwide, the YMCA has provided 37 million meals to more than one million people in the last six months. That’s an increase of more than 25% since the same time last year as they now deal with new safety regulations.“We are making sure that our community is using hand sanitizer,” Canfield said. “We are currently handling the food and then we hand them the bag when its complete.”Moving forward, the YMCA hopes to go mobile and bring food straight to people’s houses.But for now, they’ll focus on helping feed people in person. 1727

New findings out suggest many Airbnb venues in the United States may be falling short.Monica Shaffer and her husband designed her mother-in-law basement to help guests feel right at home when using Airbnb."They have a private bathroom with their own walk-in shower," Shaffer said.But most importantly, she designed it to keep them safe, if there were ever a fire."They can get out to this door if they need to," Shaffer said. "If it's an emergency fire in this room we also keep a fire extinguisher on hand in the room. It's right down here. And fire alarm as is to be expected. And there was a carbon monoxide monitor too over in that quarter. If there's ever any concern for that."When asked why Shaffer decided to undertake safety precautions, "Well I think it's just a standard expectation," Shaffer answered.Unfortunately all of the attention and care Shaffer takes, may not be as standard as you think at other Airbnb locations. New findings out from the Relevant Journal show only 57.5 percent of Airbnb venues have carbon monoxide alarms, 42.2 percent have fire extinguishers, and 36 percent have first aid kits.The results surprised Shaffer. Most Airbnbs are in private homes, and although some states have standards for rental properties, national fire safety requirements don't usually apply. Although Airbnb encourages hosts to install fire safety equipment, it doesn't require them to provide proof. Researchers hope this information will change that."You know it's having those safety precautions in place that make you feel like you're at home," Shaffer said. "And Airbnb is about staying in people's homes and feeling at home."Airbnb responded to the study with this statement:“At Airbnb, safety is our priority. All hosts must certify that they follow all local laws and regulations. We run home safety workshops with local fire and EMS services all over the world, making sure our hosts have access to the best information in order to keep their guests, their homes and themselves safe. Every listing on Airbnb clearly states the specific safety amenities it has, including smoke and CO detectors, fire extinguishers, and first aid kits, so guests can look first and then decide whether that home, tree-house, yurt, or igloo is the one they want to book or not. In addition, every home in Airbnb's Plus Collection [airbnb.com] must have a smoke and CO detector in order to even be included. The study itself says it has not undergone any ethical review, it used data from three years before Airbnb Plus even debuted, and it looks to be designed to help an incumbent industry who has its own fire safety issues that need to be addressed.“We believe more work needs to be done across the board throughout the travel and tourism industry. According to the US Fire Administration [usfa.fema.gov] there are an estimated 3,900 hotel and motel fires each year that cause 15 deaths, 150 injuries and million in property loss. Even though there have been a number of tragic high profile hotel CO poisoning incidents, only 14 states [ncsl.org] require CO alarms in hotels by statute. Sadly, only 41% [census.gov] of all homes in the US even reported having working CO detectors. Whether a home is listed on Airbnb or not, all homes and hotel rooms should have smoke and CO detectors, fire extinguishers and first aid kits.
