DALLAS, Texas — Some co-workers have found something new to bond them this holiday: A cocktail class at the office.Marisa Jeffrey said her office wanted to do something different this year, so she dressed as a fireplace. “I really liked the light up aspect of this one…,” she said, pointing to the holiday onesie she was wearing. Her colleagues were wearing similar ones with elves and reindeer and more.They are taking a cocktail class at a bar where a fun outfit is almost a requirement.“We really wanted people to step through the door and be transformed,” said Scott Jenkins of Miracle at Hide in Dallas, Texas.Jenkins is co-owner of Dallas bar “Hide,” which, this month, is called “Miracle at Hide” — a temporary holiday pop-up bar. The response?“It’s uh I can’t even put it into words. It’s been insane,” Jenkins said.Word-of-mouth has led to lines out the door… even on a weekday — all for a Christmas bar.It’s a “snowball effect, so to speak,” Jenkins said.That snowball started rolling 5 years ago at New York bar “Mace”— where founder Greg Boehm started the concept, calling it “Miracle on 9th St.” The name pays homage to the 1947 holiday classic, “Miracle on 34th St.”He’s since turned “Miracle” into a franchise. And as of this season, they’ve partnered with 84 bars around the world, including Panama, Mexico and New Zealand.He thinks he knows the secret to its popularity.“Christmas is generally a very stressful time of year for a lot of people, and I think a lot’s happening in the world that’s creating additional stress,” said Greg Boehm, founder of Miracle. “ And when you walk into a Miracle its very much transporting you into a different place, a different time. There’s some nostalgia.”Bars such as Hide pay a flat rate to the Miracle team.Everything from the greeting-card inspired menus, the glassware — even the garnishes — are on theme. Stirring up a signature Christmapolitan cocktail — their take on a cosmo — Jenkins’ co-owner at Hide, Nick Backlund, says he thought he’d quickly get sick of the holiday tunes.“I was gonna be really mad about Christmas music every day but now I’m singing them all the time,” Backlund said.Jenkins says the response to a Christmas bar is, in a way, heartwarming.“To be honest it gives me a little bit of hope. it’s something that, especially in the weird kind of climate we have today, people are out being happy, spreading cheer, having fun, being lighthearted,” Jenkins said.The only thing that could make it better? DENVER, Colo. – Colorado leaders are connecting relatively small businesses with the idea of making big, positive impacts on the environment.“Cannabis and beer, this is the perfect thing,” said Charlie Berger, the co-founder of Denver Beer Co. Berger’s team is taking part in the state’s pilot program in which his brewery captures its own carbon dioxide and sells it to marijuana growers.“It’s a really cool opportunity for us to reduce our greenhouse gas emissions,” he said. “Talking about two of Colorado’s, really the epitome of our state’s small business environment, is an easy one to talk about.”And it’s a relatively easy process. This brewery captures the Co2 emitted during the fermentation process, stores it in a machine, then ships it off to pot growers where it’s used to help with their harvests.“In front of me is Earthly Labs Co2 capture system,” said Amy George, Earthly Labs CEO. “It has the potential to capture the equivalent of 15,000 trees a year for our craft brewers.”George says this technology was once only available to really large brewers.Her team recently designed a more affordable carbon capturing process for smaller craft brewers, with the goal of reducing a billion metric tons of waste while basically turning IPA into THC.“Climate change is in front of us,” George said. “It’s important to for us to think of all the ways we can invest in technology or change our behavior to meet the needs of future generations.”And it meets the needs of The Clinic, a cannabis company based in Denver.Chris Baca, the operations manager at The Clinic, says this technology will help reduce his company’s carbon footprint – while increasing its yield of the sticky icky.“It’s always good to be ahead of the curve and with something that every grow room uses so much of it; think it’s a great opportunity,” he said. It’s an opportunity to turn what would be waste into a gas needed to grow weed.“Co2 is pretty much used in a combination with the lights to create the photosynthesis process of plants,” Baca said. With thousands of craft breweries across the country and more states legalizing marijuana, this technology is creating an environmental big buzz between beer and buds. 2214

  

Ditching the alcohol without ditching the taste sounds impossible, but more brewers are getting on board with non-alcoholic beer.Miller Coors is one of the most recognizable beer companies that are changing things up. They just launched their non-alcoholic beer, Coors Edge."We are a beer company and we are going to be a beer company for the future but we are trying to meet our consumers’ changing tastes,” said Matt Hargarten with Coors.Non-alcoholic beer is nothing new, but liquor store owner Mark Crowder remembers the old version."It used to taste like sugar sweetness trying to turn itself into alcohol,” said Crowder. “It was horrible."Companies are now stepping up the flavor game, like Heineken, Clausthaler and Brew Dog, along with smaller breweries.Non-alcoholic beer begins its life as alcoholic beer. Hargarten says taking alcohol out of beer is extremely technical and expensive.For some people, they think non-alcoholic beer is pointless, but others feel it’s healthier. Non-alcoholic beer has less calories and carbs. Some have as low as 26 calories per can or bottle.But, is it really healthier? We spoke with a dietitian who says it’s healthier for people watching their weight. But, if you like drinking the real deal, she says if women only have one a day and men only have two beers a day, that’s healthy too. "The non-alcoholic trend is growing in the United States,” said Hargarten. “In the last year, it grew 8%."It’s safe to say this trend is not going away anytime soon. 1510
